Vegetable Highlights
In 2018, the Nation’s production for the 26 estimated vegetable and melon crops totaled 753 million cwt, 1 percent below
the final 754 million cwt estimated in 2017. The utilized production totaled 747 million cwt, 1 percent below 2017. Area
harvested in 2018 was 2.50 million acres, a 3 percent reduction from the previous year. In 2018, the top three vegetables,
in terms of area harvested, were sweet corn, tomatoes, and snap beans. In terms of total production, the three largest crops
were tomatoes, sweet corn, and onions, which combined accounted for 56 percent of the all vegetables total.
The value of utilized production for 2018 vegetable crops was $12.9 billion, down 12 percent from the previous year.
Tomatoes, head lettuce, and romaine lettuce claimed the highest values, accounting for 31 percent of the total value of
production when combined. For the 26 selected vegetables and melons estimated in 2018, California continued to be the
leading State in terms of area harvested, utilized production, and value of production.

Vegetable Comments
Artichokes: Total production in 2018 totaled 1.00 million cwt, up 7 percent from the 2017 total. Planted area was
estimated at 6,900 acres, down 4 percent from the previous year. Area harvested, at 6,900 acres, was down 4 percent from
2017. The value of the crop totaled $63.0 million, 4 percent less than the previous season. Utilized production totaled
1.00 million cwt, all of which was for the fresh market.
In California, despite some early frost, favorable weather and moisture extended the 2018 season and resulted in increased
production.
Asparagus: Total production in 2018 totaled 781,800 cwt, down 7 percent from the 2017 total. Planted area was
estimated at 22,900 acres, down 17 percent from the previous year. Area harvested, at 21,700 acres, was down 17 percent
from 2017. The value of the crop totaled $87.6 million, 13 percent less than the previous season. Utilized production
totaled 774,700 cwt, of which 617,600 cwt was for the fresh market and 7,852 tons for processing.
In Michigan, the asparagus harvest began the second week of May in the Southwest region. Asparagus beetle had to be
controlled with insecticides throughout the month of May. Harvest drew to a close by the end of June. In Washington,
harvest began in early April and wrapped up toward the middle of June. In California, harvest began by early April. The
New Jersey harvest began the week ending April 23 with an excellent quality crop harvested through the beginning of
June. Cooler temperatures toward the end of May drew out the harvest to the end of June.
Green lima beans: Total production in 2018 totaled 681,700 cwt, up 2 percent from the 2017 total. Planted area was
estimated at 25,100 acres, up 2 percent from the previous year. Area harvested, at 23,750 acres, was down 1 percent from
2017. The value of the crop totaled $21.6 million, 11 percent more than the previous season. Utilized production totaled
676,900 cwt, of which 7,000 cwt was for the fresh market and 33,495 tons for processing.
In Delaware, the largest producing State, the planting season lasted from mid-May until mid-July, with the harvest season
lasting until October. Both the planting and harvesting seasons finished earlier than the five-year average.
Snap beans: Total production in 2018 totaled 17.6 million cwt, down 3 percent from the 2017 total. Planted area was
estimated at 235,400 acres, up 6 percent from the previous year. Area harvested, at 221,500 acres, was up 4 percent from
2017. The value of the crop totaled $364 million, 4 percent more than the previous season. Utilized production totaled
17.6 million cwt, of which 4.02 million cwt was for the fresh market and 677,027 tons for processing.
In Wisconsin, the largest producing State, heavy rain in late summer reduced quality. Some fields were unable to be
harvested due to excessive moisture. In New York, planting wrapped up in late July and harvest continued into early
October. In Michigan, periods of wet, cool weather hampered fieldwork and limited production.
Broccoli: Total production in 2018 totaled 17.3 million cwt, down 15 percent from the 2017 total. Planted area was
estimated at 114,900 acres, down 11 percent from the previous year. Area harvested, at 113,900 acres, was down
11 percent from 2017. The value of the crop totaled $739 million, 20 percent less than the previous season. Utilized
production totaled 17.3 million cwt, of which 16.8 million cwt was for the fresh market and 24,746 tons for processing.
In both Arizona and California, growers reported cool and wet conditions throughout the harvest season that lead to
reduced yields and production for the 2018 crop.
Cabbage: Total production in 2018 totaled 19.5 million cwt, down 18 percent from the 2017 total. Planted area was
estimated at 58,300 acres, down 7 percent from the previous year. Area harvested, at 54,200 acres, was down 11 percent
from 2017. The value of the crop totaled $409 million, 5 percent less than the previous season. Utilized production totaled
19.3 million cwt, of which 17.4 million cwt was for the fresh market and 96,274 tons for processing.
In Florida, much of the cabbage growing region avoided the drought conditions experienced in other parts of the State. In
Georgia, growing conditions were ideal for much of the season but Hurricane Michael caused significant damage leading

to abandoned acreage. In Wisconsin, reports of black rot on cabbage increased due to excessive moisture.
Cantaloupes: Total production in 2018 totaled 14.6 million cwt, down 5 percent from the 2017 total. Planted area was
estimated at 62,300 acres, down 4 percent from the previous year. Area harvested, at 60,700 acres, was down 4 percent
from 2017. The value of the crop totaled $332 million, 12 percent more than the previous season. Utilized production
totaled 14.6 million cwt, all of which was for the fresh market.
In California, the largest producing State, high temperatures during the summer months provided optimal growing
conditions. With temperatures consistently above 100 degrees, diseases were held to a minimum. However, a late-season
freeze limited production. The colder temperatures led to a slight decrease in volume and as a result, prices increased. In
Arizona, the market was steady throughout the season with excellent quality fruit reported.
Carrots: Total production in 2018 totaled 33.0 million cwt, up 7 percent from the 2017 total. Planted area was estimated
at 80,800 acres, up 1 percent from the previous year. Area harvested, at 79,800 acres, was up 5 percent from 2017. The
value of the crop totaled $732 million, 5 percent more than the previous season. Utilized production totaled 32.9 million
cwt, of which 24.6 million cwt was for the fresh market and 417,207 tons for processing.
In California, the largest producing State, the increase in production mirrors the increasing demand for specialty carrots,
yellow and purple pigmented varieties, and baby carrots. In Washington, a rainy spring and a later than normal planting
window caused carrots to be undersized.
Cauliflower: Total production in 2018 totaled 9.29 million cwt, up 2 percent from the 2017 total. Planted area was
estimated at 44,100 acres, down 6 percent from the previous year. Area harvested, at 43,900 acres, was down 4 percent
from 2017. The value of the crop totaled $425 million, 2 percent more than the previous season. Utilized production
totaled 9.28 million cwt, of which 9.10 million cwt was for the fresh market and 8,940 tons for processing.
In California, the largest producing State, quality was good however volume was down due to cooler temperatures during
the growing season. Demand during the season was good. In Arizona, colder than normal temperatures caused some
growing problems during the season however production was still up from the previous season due to increased acres.
Celery: Total production in 2018 totaled 17.8 million cwt, up 11 percent from the 2017 total. Planted area was estimated
at 30,400 acres, down 6 percent from the previous year. Area harvested, at 30,200 acres, was down 5 percent from 2017.
The value of the crop totaled $444 million, 38 percent more than the previous season. Utilized production totaled
17.8 million cwt, of which 16.5 million cwt was for the fresh market and 61,839 tons for processing.
In California, the largest producing State, conditions during the growing season were good and the quality of the crop was
excellent. Prices were much improved from recent seasons.
Sweet corn: Total production in 2018 totaled 73.3 million cwt, down 3 percent from the 2017 total. Planted area was
estimated at 494,600 acres, up 2 percent from the previous year. Area harvested, at 473,100 acres, was up 2 percent from
2017. The value of the crop totaled $859 million, 4 percent less than the previous season. Utilized production totaled 73.2
million cwt, of which 22.4 million cwt was for the fresh market and 2.54 million tons for processing.
In Minnesota, the largest producing State, wet conditions led to a late planting season. Warm summer temperatures helped
with growth, but excess fall rains left many acres unharvested due to soggy field conditions. In Washington, the weather
was hot and dry for most of the growing season. Planting started in May, with harvest lasting through the first week of
October.
Cucumbers: Total production in 2018 totaled 15.5 million cwt, down 18 percent from the 2017 total. Planted area was
estimated at 114,300 acres, down 4 percent from the previous year. Area harvested, at 110,900 acres, was down 5 percent
from 2017. The value of the crop totaled $333 million, 15 percent less than the previous season. Utilized production
totaled 15.4 million cwt, of which 5.60 million cwt was for the fresh market and 491,268 tons for processing.
In Eastern Michigan, the season was drier and hotter than normal. Some much needed rain brought relief prior to harvest,

but increased disease pressure created some quality problems. Southwestern Michigan was much wetter, with rains
hampering fieldwork. In North Carolina, 2018 was the State’s wettest year on record and the average temperatures were
above normal. Significant weather events including Subtropical Storm Alberto, Hurricane Florence, and Hurricane
Michael all impacted the growing season. Incidences of cucumber Anthracnose and downy mildew were also confirmed
during the 2018 season.
Garlic: Total production in 2018 totaled 5.74 million cwt, up 12 percent from the 2017 total. Planted area was estimated
at 33,000 acres, unchanged from the previous year. Area harvested, at 32,800 acres, was down 1 percent from 2017. The
value of the crop totaled $453 million, 16 percent more than the previous season. Utilized production totaled 5.74 million
cwt, of which 2.01 million cwt was for the fresh market and 186,550 tons for processing.
California growers reported record production, as warm weather conditions were ideal for the crop. The harvest season
ran from June through late fall. Some growers reported large and plentiful bulbs with excellent quality.
Honeydew: Total production in 2018 totaled 4.62 million cwt, up 37 percent from the 2017 total. Planted area was
estimated at 14,900 acres, up 28 percent from the previous year. Area harvested, at 14,900 acres, was also up 28 percent
from 2017. The value of the crop totaled $90.5 million, 4 percent less than the previous season. Utilized production
totaled 4.62 million cwt, all of which was for the fresh market.
In California, high temperatures in late June provided optimal conditions for growth. Additionally, the high temperatures
minimized disease. Prices were pressured downward with the abundant supplies available this season.
Head lettuce: Total production in 2018 totaled 40.6 million cwt, down 18 percent from the 2017 total. Planted area was
estimated at 120,700 acres, down 15 percent from the previous year. Area harvested, at 120,300 acres, was down 14
percent from 2017. The value of the crop totaled $1.22 billion, 31 percent less than the previous season. Utilized
production totaled 40.6 million cwt, all of which was for the fresh market.
In California, the largest producing State, iceberg lettuce acreage and production declined significantly due in part to food
safety concerns throughout 2018. In Arizona, erratic weather conditions also led to a decrease in production.
Leaf lettuce: Total production in 2018 totaled 11.3 million cwt, down 18 percent from the 2017 total. Planted area was
estimated at 69,900 acres, up 4 percent from the previous year. Area harvested, at 69,300 acres, was up 3 percent from
2017. The value of the crop totaled $585 million, 30 percent less than the previous season. Utilized production totaled
11.3 million cwt, all of which was for the fresh market.
In California, the largest producing State, extremely warm weather and concerns over food safety led to a significant
decline in production. Growers reported yields were reduced significantly due to the hot summer weather.
Romaine lettuce: Total production in 2018 totaled 29.2 million cwt, down 19 percent from the 2017 total. Planted area
was estimated at 101,500 acres, down 14 percent from the previous year. Area harvested, at 99,600 acres, was down
15 percent from 2017. The value of the crop totaled $901 million, 45 percent less than the previous season. Utilized
production totaled 29.0 million cwt, all of which was for the fresh market.
In both California and Arizona, two large scale recalls due to food safety issues led to a significant decline in demand.
Concerned growers let some of their crop go unsold.
Onions: Total production in 2018 totaled 72.4 million cwt, down 12 percent from the 2017 total. Planted area was
estimated at 135,100 acres, down 13 percent from the previous year. Area harvested, at 130,200 acres, was down 14
percent from 2017. The value of the crop totaled $817 million, 22 percent less than the previous season. Utilized
production totaled 70.9 million cwt, of which 48.4 million cwt was for the fresh market and 1.12 million tons for
processing.

In California, the largest producing State, early onions were of good quality and highly variable size, while late onions
were of more uniform size and quality. Yellow onions were in plentiful supply throughout the season. In both Oregon and
Washington, excellent weather throughout the growing season led to larger sizes than last year.
Green peas: Total production in 2018 totaled 5.07 million cwt, down 16 percent from the 2017 total. Planted area was
estimated at 141,000 acres, down 3 percent from the previous year. Area harvested, at 131,100 acres, was down 2 percent
from 2017. The value of the crop totaled $64.9 million, 24 percent less than the previous season. Utilized production
totaled 5.07 million cwt, of which 10,400 cwt was for the fresh market and 252,916 tons for processing.
In Minnesota, the largest producing State, yields were reported as below normal. Early summer rains flooded some of the
crop and some peas hardened before they could be harvested due to extreme heat. In Wisconsin, the crop was harvested
before the heavy late season rains.
Bell peppers: Total production in 2018 totaled 12.9 million cwt, down 10 percent from the 2017 total. Planted area was
estimated at 41,600 acres, down 4 percent from the previous year. Area harvested, at 39,700 acres, was down 6 percent
from 2017. The value of the crop totaled $533 million, 15 percent less than the previous season. Utilized production
totaled 12.9 million cwt, of which 11.5 million cwt was for the fresh market and 66,480 tons for processing.
In Florida, excessive rainfall in late spring and early summer damaged some of the crop and made harvesting difficult. In
Georgia, growing conditions were ideal before Hurricane Michael caused some damage in the fall. California growers
reported that high temperatures increased irrigation demands but did not impact quality.
Chile peppers: Total production in 2018 totaled 2.67 million cwt, down 20 percent from the 2017 total. Planted area was
estimated at 14,900 acres, down 13 percent from the previous year. Area harvested, at 14,200 acres, was down 11 percent
from 2017. The value of the crop totaled $94.8 million, 17 percent less than the previous season. Utilized production
totaled 2.67 million cwt, of which 551,800 cwt was for the fresh market and 105,659 tons for processing.
In California, sustained scorching summer temperatures were beneficial to the crop with many sustained days over 100
degrees. Rain showers in late September caused brief shortages. Several growers reported a strong market for organic
peppers. In New Mexico, the harvest season started a couple of weeks early due to good weather with just enough rain to
produce a good crop. Later in the summer, the weather was dry and hot.
Pumpkins: Total production in 2018 totaled 15.1 million cwt, down 5 percent from the 2017 total. Planted area was
estimated at 73,600 acres, down 5 percent from the previous year. Area harvested, at 65,900 acres, was down 9 percent
from 2017. The value of the crop totaled $190 million, 3 percent less than the previous season. Utilized production totaled
14.8 million cwt, of which 9.55 million cwt was for the fresh market and 262,134 tons for processing.
In Illinois, heavy rains during the planting season kept some farmers from planting pumpkins this year. Heavy rains in late
August and early September led to some lost crops as well as bacterial spot, which leads to a reduced storage life. In
Wisconsin, a wet, soggy fall caused a significant amount of pumpkins to rot in the fields and prevented people from
visiting pumpkin patches. Moderate temperatures in California favored pumpkin production, and dry fall weather allowed
a normal harvest.
Spinach: Total production in 2018 totaled 8.48 million cwt, up 5 percent from the 2017 total. Planted area was estimated
at 62,850 acres, down 5 percent from the previous year. Area harvested, at 61,450 acres, was down 5 percent from 2017.
The value of the crop totaled $423 million, 10 percent less than the previous season. Utilized production totaled
8.48 million cwt, of which 6.90 million cwt was for the fresh market and 79,107 tons for processing.
In California, the largest producing State, growers reported ideal weather conditions throughout the season leading to
ample supplies with good quality.
Squash: Total production in 2018 totaled 7.39 million cwt, down 8 percent from the 2017 total. Planted area was
estimated at 47,400 acres, up 100 acres from the previous year. Area harvested, at 44,800 acres, was down 2 percent from

2017. The value of the crop totaled $193 million, 18 percent less than the previous season. Utilized production totaled
7.25 million cwt, of which 5.12 million cwt was for the fresh market and 106,702 tons for processing.
In Michigan, the largest producing State, growing conditions started off as wet and cool, then alternated between wet and
cool and warm and dry. Direct seedings of squash were underway in May, and squash was sizing out by the end of July.
Georgia growers reported some minor frost damage in early spring. Hurricane Michael caused some damage to the crop
causing an increase in abandoned acres and reducing yields for some growers. A few producers noted whitefly pressures
during harvest. Florida remained mostly drought free throughout the growing season. In California, a moderate spring
with cooler temperatures and minimal extreme weather promoted flower set in all varieties of squash. Harvest was
completed at a normal time. Good supply and quality were reported throughout the entire growing season.
Strawberries: Total production in 2018 totaled 28.6 million cwt, up 5 percent from the 2017 total. Planted area was
estimated at 49,900 acres, down 9 percent from the previous year. Area harvested, at 49,220 acres, was down 7 percent
from 2017. The value of the crop totaled $2.67 billion, 8 percent less than the previous season. Utilized production totaled
28.6 million cwt, of which 22.9 million cwt was for the fresh market and 5.63 million cwt for processing.
In California, the largest producing State, many growers reported an increase in yields due to new varieties. Favorable
weather conditions for most of the season led to increased production compared with the previous season. In Florida,
growers reported warm and favorable weather conditions as well. In North Carolina, warmer weather in February resulted
in earlier blooms. In the spring, a freeze event, followed by rainy weather, caused some damage to the crop.
Tomatoes: Total production in 2018 totaled 278 million cwt, up 13 percent from the 2017 total. Planted area was
estimated at 330,800 acres, up 3 percent from the previous year. Area harvested, at 321,900 acres, was up 4 percent from
2017. The value of the crop totaled $1.86 billion, 11 percent more than the previous season. Utilized production totaled
275 million cwt, of which 19.6 million cwt was for the fresh market and 12.8 million tons for processing.
In California, the largest producing State, growers reported record high yields as extreme summer heat accelerated
development of the crop. In Indiana and Ohio, growers reported favorable weather conditions that resulted in record high
yields as well. In Florida, growers reported damage due to the combined negative effects of high temperatures in
September and October and Hurricane Michael.
Watermelons: Total production in 2018 totaled 39.0 million cwt, down 4 percent from the 2017 total. Planted area was
estimated at 116,200 acres, up 1 percent from the previous year. Area harvested, at 111,400 acres, was up 3 percent from
2017. The value of the crop totaled $657 million, 11 percent more than the previous season. Utilized production totaled
38.8 million cwt, of which 38.7 million cwt was for the fresh market and 8,420 tons for processing.
In Florida, the largest producing State, the weather was dry early in the season. Beginning in late May, the amount of
rainfall increased significantly, eliminating moisture deficiencies. The rainfall continued throughout the summer before
dropping off in the fall. In Georgia, a cool spring led to poor pollination. Precipitation levels were initially below normal,
but at levels that were sufficient for plant growth and development. In May, significant rainfall damaged crops in some
areas and increased disease pressure. Late in the summer, there were sections of the State that received excessive rainfall,
affecting quality. Hurricane Michael caused extensive crop losses to the late season crop.

Definitions of Terms
Area harvested: The total vegetable acreage harvested for all purposes (both fresh and processing utilization).
Area planted: The total vegetable acreage planted for all purposes (both fresh and processing utilization).
Harvested not sold: The difference between total production and utilized production. These are vegetables that were
harvested from the field, but were not sold for various reasons including but not limited to poor quality, marketing
restrictions, or other reasons.
Hundredweight (cwt): The standard unit used for the all yield, all total production, harvested not sold, all utilized
production, as well as the fresh market utilized production and fresh market price. One hundredweight is equal to 100
pounds.
Ton: Standard unit for processed vegetables. One ton is equal to 2,000 pounds.
Total Production: The quantity of a crop that was actually harvested and left the field.
Utilization: These estimates refer to the first utilization, not necessarily the final utilization of a crop. For example, fresh
market vegetables include some vegetables that may be later processed for sauce, soups, and preserves. Grade-outs for
vegetables which are processed are included in the processing quantity.
Utilized production: The amount of a crop sold for fresh market, sold for processing, the quantities used at home to make
processed items, or held in storage. It is the difference between total production and harvested not sold.
Yield per acre: Total production divided by area harvested.
Price and Value Definitions
Price: Represents the Marketing Year Average (MYA) price. For a crop sold for both fresh market and processing, the
(MYA) is a weighted average of the fresh and processing prices.
Prices for fresh vegetables are the average prices producers receive at the point of first sale. This is commonly referred to
as the average price as sold. Since the point of first sale is not the same for all producers, prices for the various methods
of sale are weighted by the proportionate quantity sold. For example, if in a given State part of the vegetables are sold free
on board (F.O.B.) packed by growers, part are sold as bulk vegetables at the packinghouse door, and some are sold retail
at roadside stands, the fresh vegetable average price as sold is a weighted average of the average price for each method
of sale.
F.O.B. packed prices are adjusted to an equivalent incoming packinghouse door price by subtracting all costs that
accumulate between the incoming packinghouse door and the F.O.B. price. These costs include grading, packing,
inspecting fees, selling, and other costs. Prices for vegetables sold for processing are equivalent returns for vegetables
delivered to the processing plant door.
Value: Crop value estimates in this report cover the marketing season or crop year and should not be confused with cash
receipts which are based on a calendar year.

Statistical Methodology
Survey Procedures: Starting with the 2012 Crop year, acreage, production, marketing year price and value information
included in this report is collected on an annual basis for fresh market and processing vegetables. A sample of vegetable
growers are surveyed in major producing States in the program. The Vegetable Sampling Frame consists of farm
operators with at least 0.1 acre on the list frame for specific vegetable commodities. The Multivariate Probability
Proportional to Size (MPPS) sampling design is used to select the sample. The sample does not have an area component.
Data are collected by mail out questionnaires and personal interviews. Telephone follow-up of mail survey nonrespondents is used to ensure adequate coverage. Due to the variable nature of the vegetable industry, mail lists are
updated to ensure complete coverage.
Estimation Procedures: Information obtained from the vegetables grower surveys along with federal administrative data
is used to establish estimates of total planted and harvested acres, yield, production, price, and value. These estimates are
reviewed for errors, reasonableness, and consistency with historical estimates.
Revision Policy: End-of-season vegetable estimates are subject to revision the following year based on a thorough review
of all available data and are published in the Vegetables Annual Summary.
Reliability: Survey indications are subject to sampling variability because all operations growing vegetables are not
included in the sample. Survey results are also subject to non-sampling errors such as omission, duplication, imputation
for missing data, and mistakes in reporting, recording, and processing the data. These errors cannot be measured directly,
but are minimized through rigid quality controls in the data collection process and a careful review of all reported data for
consistency and reasonableness.

Agricultural Service, and World Agricultural Outlook Board – and the Census Bureau’s Foreign Trade
Division. Agency representatives will provide updates on recent and pending changes in statistical and
