Correctional food workers, inspectors, or trainers
Listening sessions and interviews will be semi-structured and will not include a formal set of questions asked to each respondent. Discussions will be used to understand specific challenges and amplifiers of food safety in correctional facilities. Food workers may include both contracted and incarcerated food workers.
Topics:
Training for food workers on food safety and preferred materials
Awareness of food codes and food safety policies (cooking/holding temperatures, sick worker policies, inspections)
Most important challenges with food safety in correctional facilities
Experience with foodborne illness outbreaks in correctional facilities
Experience with food safety inspections in correctional facilities
Public reporting burden of this collection of information is estimated to average 60 minutes per response, including the time for reviewing instructions, searching existing data sources, gathering and maintaining the data needed, and completing and reviewing the collection of information.
