As agreed to be the Agency, FNS will conduct a plate waste
evaluation in one-third of the 35 SFA's participating in the
evaluation. FNS will use these results to validate against the SNDA
assessment of plate waste to establish a baseline for all the
schools participating. At the post-test, FNS will examine the
plate- waste for all 35 SFA's. OMB anticipates that the plate waste
results, in combination with participation rates, will give us an
indication of student reaction/satisfaction with school meals under
a nutrient- based system.

INFORMATION WILL BE USED TO EXAMINE
THE IMPACT OF NUTRIENT STANDARD MENU PLANNING ON THE NUTRIENT
CONTENT OF MEALS OFFERED AND THE COSTS AND CHANGES IN THE FOOD
SERVICE OPERATION. THIRTY-FIVE SCHOOL FOOD AUTHORITIES WILL
PARTICIPATE IN THE DEMONSTRATION AND EVALUATION OF TH ALTERNATIVE
TO THE CURRENT NSLP MEAL PATTERN REQUIREMENT.
