Terms of Clearance: Comment is being filed on this collection. OMB has concerns regarding the burden of and need for parts of this collection which shall be assessed in light of public comments received. OMB is particularly interested in comments on the contents of the HACCP plan; the burden associated with the recordkeeping requirements, particularly for small businesses; the burden of and need for mandatory sanitation standard operating procedure (SOP) records; and the potential burden reduction that could be achieved by use of a performance standard (e.g. the 5-log reduction) in lieu of a HACCP program. FDA shall address comments received on these and other information collection and recordkeeping requirements in the final HACCP rule.

Abstract: This proposed regulation would mandate the application of HACCP systems to fruit and vegetable juice processing. HACCP is a preventive system of hazard control that can be used by all food processors to ensure the safety of their products to consumers. FDA is proposing these regulations because a system of preventive controls is the most effective and efficient way to ensure that food products are safe.
