Abstract: The application of ascorbic acid, erythorbic acid, ctiric acid, sodium ascorbate, and sodium citrate to the surface of fresh beef or lamb cut would delay discoloration of such cuts. Use of these substances would result in the preservation of fresh color and appearance throughout the product's microbiological shelf life.
